The harvest season has taken us to Panama – a small but mighty producing country with exceptional coffee quality. Panama is known for having microclimates that provide unique conditions that bring out the best in specific Arabica varieties. These microclimates also help to keep pests and diseases under control, which contributes to cup quality.

Panama has three producing regions surrounding three volcanoes: Baru, El Valle, and Le Yeguada. This month's coffee is from Boquete, located next to the Baru volcano. Coffees grown here develop high sugar concentrations, resulting in sweet and complex profiles.

The Ameglio family harvested this coffee just two months ago at optimal ripeness from their farm, Santa Elena. Santa Elena's temperatures only fluctuate between 62º and 73º Fahrenheit, providing coffee beans with a stress-free environment to develop.
