What do red and yellow taste like? This and next month’s editions are about finding out the flavor differences of color. 

It is harvesting season in Nicaragua and we stumbled across two similar coffees whose main difference is the color of their coffee cherry: one is a red Catuai variety, the other is a yellow Catuai variety. After tasting slight differences in flavor we decided to do our first ever series so that you can firsthand experience how difference in color affects flavor. Expect the yellow Catuai next month.

This month’s red Catuai variety comes from finca Santa Maria de Lourdes in Nueva Segovia. The farm is powered by a hydroelectric plant, making the operation self-sustainable and environmentally friendly. The natural anaerobic process used in this coffee is similar to the natural process we have shared with you in the past. However, in the anaerobic process oxygen is removed to better control the variables of the fermentation process and balance the coffee even more: expect a creamier, fruity profile of strawberry, chocolate and brown sugar.
