This year's final edition is a natural processed yellow bourbon from a bright and mountainous region of Colombia: Huila. El Huila is a department known for producing some of the best lots in the country, with regular placements in international competitions and cuppings.

We picked a yellow bourbon variety from finca Esmeralda in Santa Maria, Huila to introduce this special region to the subscription. There are four main bourbon varieties: red, pink, orange, and yellow. We have brought pink and red varieties in the past, but not so many yellow varieties. As striking as it might sound, this yellow bourbon resembles a chocolate cake topped with blackberries. It has a medium body with silky and smooth aftertaste.

The producer in charge of finca Esmeralda is Edilberto Tovar. As you have come to expect from Quintal Subscription, this coffee will be exceptionally fresh. Edilberto just finished harvesting this coffee in October. He used an 18 hour natural fermentation process and sun dried beds to get this coffee ready for roasting.
